Ricotta and spinach Christmas tree

    A simple yet tasty and elegant Christmas appetizer, to surprise your guests. Cutting out a Christmas tree from puff pastry is not that difficult, as long as the puff pastry is well chilled.

    Serves: 10 

    • 400g frozen spinach
    • 250g ricotta cheese
    • 1 egg, lightly beaten
    • 70g grated Parmesan cheese
    • salt and pepper, to taste
    • 1 pinch nutmeg
    • 1 egg yolk, for brushing
    • 2 rectangular puff pastry sheets (500g total)

    1. Make the filling: Cook the spinach in boiling water for 3 to 4 minutes. Drain and leave in a colander for 10 minutes. Squeeze and chop roughly. Transfer to a bowl.
    2. Add ricotta, egg, grated Parmesan, salt, pepper and nutmeg. Mix well.
    3. Preheat the oven to 190 C / Gas 5. Line a baking sheet with parchment paper.
    4. With a rolling pin roll out the 2 puff pastry sheets to make 2 rectangles of 28x33cm each. Transfer the first rectangle to the prepared baking sheet.
    5. With a sharp knife trace (but do not cut) a big pointy triangle with a small rectangle at the base so it looks like a solid Christmas tree with its trunk. Spread the ricotta and spinach mixture over the area inside the triangle.
    6. Gently cover with the second puff pastry sheet. Press on the second sheet to trace the underlying triangle and with a sharp knife cut through the 2 puff pastry sheets. Use the leftover pastry for a different use. For example, you can cut out one or more stars to decorate the tree.
    7. Using the base of the triangle as reference, cut horizontal strips on each side of the tree. These will be the branches. Make a deep cut to go through the 2 layers of puff pastry and the filling.
    8. Starting from the bottom, twist each branch; twist the longer ones 2 or more times, and the shorter ones just once. Brush the tree with the beaten yolk.
    9. Bake in the preheated oven until golden, 12 to 15 minutes. Cool slightly, then gently slide on a serving plate and serve.

    If the puff pastry gets soft

    Cutting out the Christmas tree will require time, and the puff pastry might get warm and soft. If that happens, refrigerate for 10 to 15 minutes before baking, until becomes firm and cold again.
