Meloui (Arabic flatbread)

    These flatbreads can be enjoyed sweet or savoury. They are often served warm as a complement to Moroccan dishes with sauce. They can also be served as dessert with honey or sugar.

    Serves: 6 

    • 500g plain flour
    • 1 pinch salt
    • 250ml lukewarm water
    • 100g smen (or salted butter)

    1. In a large bowl, combine the flour and salt. Add water gradually until you get a non-sticky dough. Blend in the smen or butter by hand and knead, until the dough is smooth and non-sticky. Sprinkle with a little flour if necessary.
    2. Place the dough on a lightly floured surface, and form into small balls. Flatten the small balls using a rolling pin. They should be neither too thin nor too thick, about the thickness of a pitta and just smaller in diameter than traditional crêpes.
    3. Cook each flatbread in a lightly oiled frying pan, until nicely golden. Serve hot.


    Smen is salted fermented butter, common in North African and Middle Eastern cuisine. If you can't find Smen, regular salted butter can be used.
