Cashew ghoriba biscuits

    Ghoriba (also spelled ghriba) biscuits are popular in the Maghreb countries. They contain no flour and no butter and thus are perfect for a lactose or gluten free diet. I use cashews instead of almonds; I find them much tastier than almonds.

    Ingredients
    Makes: 15 biscuits

    • 250g ground cashews
    • 100g icing sugar
    • 2 egg yolks
    • 1 to 2 tablespoons orange blossom water
    • icing sugar
    • whole almonds

    Method

    1. Preheat the oven at 180 C / Gas 4. Line a baking tray with greaseproof paper.
    2. In a bowl, mix the cashews and icing sugar. Add the egg yolks and orange blossom water and mix to a smooth homogeneous paste.
    3. Take lumps of the cashew paste and shape into small balls. Roll the balls in icing sugar and transfer to the baking tray. Push an almond in the centre of each ghribia.
    4. Bake until the biscuits are lightly golden, about 20 minutes. Keep an eye on them, they burn quickly.
