Champ cakes with cherry tomato dressing

About this recipe: Champ is an Irish dish of mashed potatoes and leeks, and here the tomato dressing adds colour as well as vitamins. Potatoes, in this dish unpeeled, contain their best source of fibre and nutrients in and just under the skin.

Serves: 4 

  • 550g (1lb 4oz) unpeeled floury potatoes, washed and roughly chopped
  • 225g (8oz) leeks, thinly sliced
  • 200ml (7fl oz) semi-skimmed milk
  • 1 egg, beaten
  • Salt and black pepper
  • Plain flour for shaping
  • Olive oil for brushing
  • For the tomato dressing
  • 225g (8oz) cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon sherry vinegar
  • 2-3 teaspoons fresh thyme leaves
  • Salt and black pepper

  1. Steam the potatoes for about 15 minutes or until tender. Transfer them to a dry saucepan.
  2. Meanwhile, put the leeks and milk into another saucepan. Cover and cook over a low heat for 5-8 minutes until tender. Drain, reserving the liquid.
  3. Heat the potatoes gently for a couple of minutes, shaking the pan, then mash.
  4. Add the leeks and egg to the potatoes. Stir to mix, then add 2-3 tablespoons of the reserved liquid, until soft but not sloppy. Add salt and pepper to taste, spread on a plate and leave to cool. Chill for at least 1 hour.
  5. Meanwhile, make the tomato dressing. Put the tomatoes, oil, vinegar and thyme in a small saucepan and heat, stirring occasionally, until the tomatoes are beginning to collapse. Using kitchen scissors, chop the tomatoes in the pan. Add salt and pepper to taste and set aside.
  6. With floured hands, form the potato and leek mixture into eight flat cakes. Brush lightly with oil and preheat the grill to high. Grill for 2-3 minutes on each side until golden and heated through. Heat the dressing for 2 minutes and serve with the cakes.

I tried this and it was just fine. Everything worked well. However the title is misleading as it should be called "potato cake..." Champ is a Northern Irish dish made from potatoes and scallions (green onions) not leeks and really has nothing else in it other than potatoes, scallions (maybe milk) and butter. Once you add anything else it ceases to be champ. - 16 Nov 2009
