Kai jiaw (Thai-style omelette)

    This typical Thai breakfast omelette is very quick to prepare and a good source of protein in the morning. We eat this with plain rice porridge for a healthy, satisfying start to our day.

    Serves: 2 

    • 3 eggs
    • 1/2 small onion, sliced thinly
    • 2 dashes fish sauce (or salt)
    • 1 tablespoon vegetable oil

    1. In a small bowl combine eggs, onion and fish sauce. Whisk well.
    2. In a wok or a frying pan heat the oil over high heat. Pour the egg mixture in. If the oil is properly hot it will splatter a bit and the eggs will start to puff up. Use a utensil to scramble the eggs in the middle a little bit to help cook the omelette faster.
    3. After a minute or two, when the bottom is golden brown, flip the omelette and let the other side brown too.
    4. Serve sliced alongside a steaming hot bowl of rice porridge.
