Spiced tomato and cucumber raita

    Serves: 4 

    • 250g natural yoghurt
    • 2 onions, chopped
    • 2 tablespoons chopped seeded tomatoes
    • 2 tablespoons chopped cucumbers
    • 1 tablespoon ghee
    • 1 teaspoon cumin seeds
    • 1 teaspoon chopped curry leaves
    • 2 teaspoons chopped fresh coriander
    • 1 pinch black salt
    • 2 tablespoons caster sugar

    1. Mix yoghurt with onion, tomato and cucumber in a bowl. Put the bowl in the fridge for 10 minutes.
    2. Heat a pan with ghee, and add cumin seeds, curry leaves and coriander. Fry until the seeds sputter and begin to brown. Take the pan off the heat and allow the ingredients to cool.
    3. Combine the cooled spice mixture with the yoghurt mixture. Add black salt and sugar; stir and mix well. Chill in fridge for 10 minutes, and serve.
