    About this recipe: Fish is a mainstay in Kerala and this is a common way to prepare it. Use any firm fish here, such as tilapia, salmon, trout or basa. Serve with steamed rice.

    Ingredients
    Serves: 4 

    • 500g fish, cut into pieces
    • 3 small red onions or shallots
    • 2 dry red chillies
    • 1 teaspoon chilli powder
    • 1/2 teaspoon turmeric
    • salt to taste
    • oil for deep frying

    Method

    1. Place peeled onion or shallot into a food processor along with the chillies, chilli powder, turmeric and salt. Process till a smooth paste forms. Transfer to a bowl or shallow dish.
    2. Add the fish pieces to the onion mixture and toss to coat. Cover with cling film and marinate in the fridge for 1 hour.
    3. Heat oil in a deep fryer or heavy saucepan. Once hot, add the fish pieces one at a time, taking care not to overcrowd the pan. Cook for 2 to 4 minutes, till browned and firm. Remove and drain on kitchen paper; repeat with remaining fish.
