About this recipe: Pitta bread is topped with a spinach, olives, tomatoes, feta, mozzarella and a lemon dressing in this Greek-inspired vegetarian pizza.


Serves: 2 

  • 2 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 6 tablespoons olive oil
  • 2 round pitta breads
  • 100g fresh spinach leaves
  • 40g halved cherry tomatoes
  • 3 tablespoons chopped pimento-stuffed green olives
  • 50g grated mozzarella cheese
  • 75g feta cheese

  1. Preheat oven to 180 C / Gas 4.
  2. Mix lemon juice, garlic powder, oregano and basil in a bowl; whisk oil into lemon juice mixture until dressing is well blended. Brush about 1 tablespoon dressing over pitta breads and arrange on a baking tray; reserve remaining dressing.
  3. Combine spinach, tomatoes and olives in a large bowl. Pour remaining dressing over vegetables and toss to coat. Divide spinach mixture evenly over each pitta; sprinkle with mozzarella cheese and feta cheese.
  4. Bake in the preheated oven until cheese is melted and pittas are lightly toasted, about 8 minutes.
