Yummy leek and potato soup

    This is my take on a classic soup. I've tried quite a few leek and potato soup recipes over the years, adding and taking away ingredients and increasing and decreasing ingredients but I think I've finally found a recipe that's perfect! I'm a dedicated slimming worlder so this recipe is syn free. So here goes. By the way this is my first time posting a recipe so be kind!

    Serves: 3 

    • 900ml boiling water
    • 2 vegetable stock cubes
    • 3 medium sized potatoes, peeled and diced
    • 2 leeks, sliced
    • 1 white onion, roughly chopped
    • 2 garlic cloves, sliced
    • salt and pepper to taste

    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Add stock cubes to boiling water and let them dissolve. Add all ingredients to a large lidded pan. Bring to the boil then leave to simmer with the lid on for 25 to 30 minutes.
    2. I have a hand held blender so I use that to purée the soup to the consistency that I like (smooth with a few lumpy bits).
    3. Season with salt and pepper to taste. I find the stock cubes add enough salt for me but everyone's tastes differ.


    I find this recipe usually makes 3 good size portions. That's it. Enjoy.
