Very tasty stuffed peppers with mince and rice

    Peppers stuffed with a mince and rice combination that's incredibly tasty and easy to make.

    Makes: 6 peppers

    • 500g minced beef
    • salt and pepper to taste
    • 2 onions, chopped
    • 4 or 5 mushrooms, chopped
    • 3 garlic cloves, chopped (or to taste)
    • 1 tablespoon tomato puree
    • 400g tin chopped tomatoes
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground nutmeg
    • 1 packet basmati rice
    • 6 peppers
    • grated cheese (optional)
    • creme fraiche to serve (optional)

    1. Brown off your mince adding a bit salt and pepper.
    2. Add onion, mushrooms and garlic. Cook for 10 minutes.
    3. Add tomato puree, tinned tomatoes, nutmeg and paprika. Warm through.
    4. Add packet of rice, stir and warm through.
    5. Cut top off peppers and stand in tray using scrunched tinfoil to balance them.
    6. Stuff with mince mixture, pop top of pepper back on.
    7. Pop into a preheated moderate oven for 20 minutes to half hour.
    8. Sprinkle with cheese for last 10 minutes in oven, if liked.
    9. Serve with low fat creme fraiche.
