Oatmeal banana cookie bites

    No added sugar, nutritious oatmeal cookie bites made with oats, mashed bananas and dates. They make a great afternoon school snack or healthy lunchbox treat. Use gluten-free oats if you need to be absolutely certain to exclude gluten.

    Makes: 36 bite-size cookies

    • 3 ripe bananas
    • 160g porridge oats
    • 145g dates, pitted and chopped
    • 80ml vegetable oil
    • 1 teaspoon vanilla extract

    Prep:15min  ›  Cook:20min  ›  Extra time:15min soaking  ›  Ready in:50min 

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, mash the bananas. Stir in oats, chopped dates, oil and vanilla. Mix well and set aside for 15 minutes.
    3. Drop by teaspoonfuls onto an ungreased baking tray. they will not spread so no need to space them out too much.
    4. Bake for 20 minutes in the preheated oven, or until lightly brown.

    Great for the kids! I only put in 100g of dried mixed fruits as opposed to the dates, then my 6 month old could eat them too :-) sugar free, flour free, butter free, and healthy! Great! I added some cinnamon and ground ginger which was tasty.  -  11 Sep 2017


    These are very, very good and healthy! I used chunky applesauce instead of the oil and spiced rum instead of vanilla. I also added about 1/3 cup honey and another 1/2 cup of oatmeal, and left out the dates. They were SO easy and SO quick!!     My children love these cookies! I have made them with other dried fruits, chopped apples, even mini chocolate chips! I've also baked them in a bar pan for quick soft granola bars.
