Cook the cauliflower until just soft. Drain well (ideally leave to drain for 30 minutes, you really want to get all the moisture out).
Mash the cauliflower and mix with the grated hard cheese and season to taste. If the mixture is still wet, squeeze out any excess water.
Take about a heaped teaspoon of the mixture and form into a ball. Roll in the Parmesan to coat it. Continue with the remainder. This should form about 16 tots.
Place on a greased tray and bake at 200 C / Gas 6 for 10 to 12 minutes until crispy. Enjoy!
You can vary the type of hard cheese and seasoning for variety and to match your meal. For example use a hot cheese with chillies, or add chilli powder to the Parmesan to add a kick to your meal. Try adding cumin or curry powder to the cauliflower, to accompany an Indian meal. Or add feta and oregano or basil for a Mediterranean flavour. The combinations are endless!
