    About this recipe: Easy and quick supper. Gluten free and low carb. For added flavour, try first roasting the asparagus with a little olive oil and seasoning instead of steaming or boiling.

    Ingredients
    Serves: 2 

    • 1 pack asparagus
    • 3 eggs
    • 2 tablespoons melted butter
    • salt and pepper to taste
    • 50g grated cheese (Parmesan or any hard cheese)

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 200 C / Gas 6.
    2. Boil or steam the asparagus until firm but just tender. Drain well, then line up in a baking dish.
    3. Beat the eggs with the melted butter and seasoning (or whisk for a really light fluffy dish).
    4. Pour the egg mixture over the asparagus, and sprinkle the grated cheese on top.
    5. Bake 13 to 15 minutes until the eggs are set and the cheese is golden brown.
