Heat the butter in a frying pan over medium heat. Add the steaks and pan fry until lightly browned on both sides and no longer pink in the centre, 10 to 15 minutes. Remove from pan and set to one side.
Add the mushrooms to the pan and cook and stir for 4 to 5 minutes. Remove from pan.
Add wine (and brandy if using) to the pan and bring to the boil, then simmer for 5 minutes. Add the cream and simmer for another 3 to 4 minutes.
Return the steaks and mushrooms to the pan until heated through and hot again. Season to taste, then serve and enjoy.
