1kg sweet onions
2 tablespoons extra virgin olive oil
100ml white wine vinegar
1 teaspoon sugar
1 teaspoon salt

Peel the onions and chop each one into 8 wedges.
Pour the oil into the bottom of a casserole pot (that can also go under your grill); arrange the onion wedges, one close to the other. Mix vinegar, sugar and salt together; pour on top of the onions. Add enough water to cover the onions. Cook on low heat for 20 minutes or until the water has evaporated and the onions are soft.
Transfer the casserole pot under the grill and cook for 5 minutes or until crisp. Serve.
