Flavoursome pizza sauce

    I really dislike throwing out food, so thought I'd make up some pizza sauce and add the extra veg I had, and this is what happened! Actually turned out fab, if I say so myself! You don't need to chop finely as the last step will sort this out!

    Makes: 500 g, approximately

    • 4 to 5 tablespoons olive oil
    • 3 white onions, diced
    • 3 carrots, chopped
    • 1 green pepper, chopped
    • 1/2 punnet closed cup mushrooms, chopped
    • 6 garlic cloves, chopped
    • 1 large bunch fresh basil leaves
    • 3 (400g) tins whole plum tomatoes
    • 2 OXO® cubes
    • 1 pinch sugar
    • sea salt and freshly ground black pepper to taste

    1. Heat a large, deep, tall pan on medium heat. Add onion, carrots, green pepper, mushrooms and garlic. Stir well, turn down the heat, cover and let it sweat. Check and stir frequently to avoid burning.
    2. When the onions have turned translucent, add the basil leaves. Stir, then add the tomatoes. Mash up the tomatoes, crumble over the OXO® cubes, add a pinch of sugar and season well with salt and pepper. Taste and adjust seasoning if needed.
    3. Bring to the boil, reduce heat to a gentle simmer, then simmer uncovered for 20 minutes, stirring halfway through. Turn of heat, stir well, then leave uncovered to cool for 20 to 30 minutes.
    4. Using a handheld blender, blend until smooth (be careful of splashes if sauce still hot). Leave to cool and use as needed.
    5. After blending, return to heat and heat to reduce sauce further if needed. Taste and adjust seasoning if needed.


    Makes a lot, it usually fits into a jam jar that normally holds about 300g of coffee. Also could freeze in plastic containers in the amount that could be defrosted and used in one go!. Please do tell me if there's an issue with the recipe or any questions welcomed!
