Nuvvu podi (Spicy sesame seed powder)

    This spicy Indian seasoning is made from toasted sesame seeds and dried red chilli peppers. It takes some effort to grind it down with a mortar and pestle but it is definitely worth it. This seasoning is great for rice. It also adds a lovely flavour when sprinkled into Andhra kooras (sabjis). The powder will keep for a few months in a jar on a shelf.

    Serves: 200 

    • 240g sesame seeds
    • 1/2 teaspoon sesame oil
    • 10 dried red chilli peppers, or to taste
    • salt to taste

    Prep:15min  ›  Cook:10min  ›  Extra time:15min cooling  ›  Ready in:40min 

    1. Toast the sesame seeds in a dry pan over medium-low heat until fragrant, about 5 minutes. Spread on a baking tray to cool.
    2. Heat 1/2 teaspoon sesame oil in the pan, again over medium-low heat. Fry the red chilli peppers in the hot oil until they begin to change colour, about 5 minutes. Cool on the baking tray.
    3. Use a mortar and pestle to grind the sesame seeds, chilli peppers and salt into a powder.

    Skip the gym today and break out your heaviest pestle and mortar folks. You gotta try this. The fragrant smell of toasty sesame seeds and the spicy peppers will have your mouth watering.
