Quick tuna and rice for two

    This is very quick and easy to make using basic ingredients but has bags of flavour. I have been making variations of this for years depending on what ingredients I have available. Suggested ingredient options: spring onions chopped finely and added at the end with the tuna; tinned sweetcorn; a splash of Thai fish sauce adds a nice Thai style flavour; a large carrot sliced thinly and softened with the onions. You can experiment yourself to find your favourite version.

    Serves: 2 

    • 175g easy cook rice
    • 1 1/2 tablespoons vegetable oil
    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 1 mugful frozen peas
    • 1 tin tuna, drained
    • salt and pepper to taste
    • soy sauce to taste

    1. Start cooking your rice as per the packet instructions.
    2. Heat the oil in a large saucepan add the onion and garlic and cook until the onion is soft and translucent.
    3. Remove the onion and garlic from the heat and add the frozen peas to the pan. Then set the pan aside.
    4. Once your rice is cooked and ready to serve, reheat the onions, garlic and peas until hot. Don't overcook the peas. Add the rice to the pan and gently mix.
    5. Drain your tin of tuna and fork the flakes out into the pan.
    6. Gently mix everything in the pan, season to taste and then serve into bowls.
    7. Add soy sauce to taste and enjoy your healthy, quick and tasty meal.


    When the cupboards are empty this is a good recipe to tweak yourself by using whatever ingredients you have available.
