Dad's creamy cucumber salad

    This is my dad's recipe and one of our family's summer favourites. It's basically slices of cucumber and sweet onion in a dressing made with mayonnaise and vinegar.

    Serves: 8 

    • 2 large cucumbers, peeled and thinly sliced
    • 1 sweet onion, thinly sliced
    • 1 tablespoon sea salt, or to taste
    • 350ml mayonnaise, or more to taste
    • 2 tablespoons vinegar
    • 1 tablespoon sugar
    • 1 teaspoon dried dill
    • 1 teaspoon garlic powder
    • 1 teaspoon freshly ground black pepper

    1. Mix cucumber and sweet onion with sea salt in a bowl. Cover bowl with cling film and let sit for 30 minutes.
    2. Transfer cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes. Transfer drained cucumber mixture to a large bowl.
    3. Stir mayonnaise, vinegar, sugar, dill, garlic powder and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
    4. Cover bowl with cling film and refrigerate for at least 2 hours.

    I'm sorry, I followed the recipe exact. After I covered the salad with plastic wrap and let it sit, I came back and the bowl was filled with liquid. The salt had continued to pull liquid from the cucumbers and onions which made this thin slurry that made having dressing impossible.  -  21 Jul 2014  (Review from Allrecipes US | Canada)


    This cucumber salad is very tasty! I salt my cucumbers for a bit and then drain them. You always have to drain the liquid off the cucumbers. The salt is what makes the cucumbers soft and salt-flavored. Delicious!  -  04 Aug 2015  (Review from Allrecipes US | Canada)


    As a kid growing up, my mom used to make a recipe similar to this. I knew the basic ingredients, but not the measurements. I am so glad I found this recipe.
