Slow cooker ham in ginger ale and pineapple

When cooked overnight in the slow cooker and finished off briefly the following day, this ham slices easily. The flavour is great for anyone who likes a sweet and sour taste and is especially delicious sliced cold for a fabulous summer salad or any barbecue type buffet.

Ingredients

- 1 joint gammon, skin on
- 1 to 2 litres ginger ale (amount depends on your slow cooker capacity)
- 2 tablespoons pineapple juice
- 2 tablespoons grain mustard
- 2 tablespoons runny honey
- 2 tablespoons brown sugar
- salt and pepper to taste

- Place ham, ginger ale and pineapple juice in slow cooker and set on low for at least 12 hours or overnight.
- Remove the joint, discard the liquid. Set aside the ham till cool enough to handle.
- Score the skin of the joint, mix all other ingredients and rub them all over the joint.
- Bake in 200 C / Gas 6 oven for 20 to 30 minutes until nicely blackened and crispy. Allow to cool before slicing.
Tip
I have tried this using cola but one Sunday when I had the meat but no cola, I had ginger ale and long life pineapple juice, so I developed the idea slightly. The taste is more subtle but my family loved it. Also, it's really inexpensive but tastes luxurious.
