Brown rice, seaweed and avocado salad

    55 min

I threw this together in a hurry one day and loved the way it came out. It's simple, filling and that little bit different. You can get dried wakame seaweed in health food shops and in some of the larger supermarkets. Serve cold as a salad or warm as a side dish.

    2 people made this

    Serves: 4

    • 535ml water
    • 190g brown rice
    • 1 tablespoon butter (optional)
    • 1 teaspoon salt (optional)
    • 1 tablespoon dried wakame seaweed
    • 475ml water
    • 1 ripe avocado, diced
    • 2 teaspoons toasted sesame seeds

    Prep:10min  ›  Cook:45min  ›  Ready in:55min

    1. Bring water, brown rice, butter and salt to the boil in a saucepan. Reduce heat to medium-low, cover and simmer until tender, 45 to 50 minutes.
    2. Soak seaweed in 475ml water for 5 minutes; drain in a sieve. Scoop rice into a bowl and gently fold in seaweed, avocado and sesame seeds.

I love this rice! Thank you so much for posting it. I make it without butter and salt, and it's just great!  -  13 Jan 2011  (Review from Allrecipes US | Canada)

I was excited to see this recipe because I had some wakame flakes. The flavor is pretty bland. I substituted sesame oil for the butter. I wasn't too impressed with the flavor and decided not to waste the avocado on this recipe. I'm gonna add some seasoned rice vinegar and try and turn it into a salad.  -  29 May 2011  (Review from Allrecipes US | Canada)

I love this concept! I felt like the original was a little bland, but it has a lot of potential. We added in some ground beef, but I think what this might really need is a dash of rice vinegar and maybe some furikake. A great start, well deserving of a good review.  -  05 May 2012  (Review from Allrecipes US | Canada)
