About this recipe:I threw this together in a hurry one day and loved the way it came out. It's simple, filling and that little bit different. You can get dried wakame seaweed in health food shops and in some of the larger supermarkets. Serve cold as a salad or warm as a side dish.
190g brown rice
1 tablespoon butter (optional)
1 teaspoon salt (optional)
1 tablespoon dried wakame seaweed
1 ripe avocado, diced
2 teaspoons toasted sesame seeds

Bring water, brown rice, butter and salt to the boil in a saucepan. Reduce heat to medium-low, cover and simmer until tender, 45 to 50 minutes.
Soak seaweed in 475ml water for 5 minutes; drain in a sieve. Scoop rice into a bowl and gently fold in seaweed, avocado and sesame seeds.
