Super healthy raw beetroot salad

    This is a really healthy superfood salad. It's made with all fresh ingredients: fresh beetroot, fresh turmeric, garlic, etc. No added colouring. It's great served with BBQ in summer. Excellent with all types of meats and fish. I try and use organic ingredients when available. Sometimes I add a little grated red cabbage or apple too. Enjoy.

    Serves: 4 

    • 2 large beetroots
    • 3 medium carrots
    • 1 small piece root ginger
    • 1 small piece fresh turmeric
    • 2 cloves garlic
    • 2 lemons, juiced
    • 1 tablespoon chilli seeds (optional)
    • salt and freshly ground black pepper
    • 2 to 3 tablespoons olive oil or sunflower oil

    1. Peel and trim the carrots and beetroot, then coarsely grate both. Then on the fine grater, grate the garlic, ginger and turmeric.
    2. In large bowl mix all of the above ingredients together, add the lemon juice, chilli seeds and oil. Mix again. Taste and adjust seasoning with the salt and pepper.
    3. Serve straightaway, or I like to make it a few hours before serving so it all marinates together in the fridge.

    Cook's notes

    Please wear rubber gloves if you don't want pink or orange hands from the beetroot or turmeric! If you can't find fresh turmeric, you can add ground turmeric to taste.
