    About this recipe: This was something I made one evening when I didn't have much in so just worked with that I had and the results were so yummy. I know I'll be making it again and again.

    Ingredients
    Serves: 2 

    • 2 chicken breast fillets, chopped
    • 1 courgette, chopped
    • 5 spears asparagus, chopped
    • 250ml chicken stock
    • 2 sheets dried egg noodles
    • 1/2 red chilli, finely chopped
    • juice of 1 lemon
    • 1 handful frozen garden peas
    • 1 handful chopped fresh parsley
    • salt and pepper to taste

    Method
    Prep:5min  ›  Cook:12min  ›  Ready in:17min 

    1. Gently fry off the chicken, courgette and asparagus until chicken is starting to brown.
    2. Bring the stock to the boil and add noodles, simmer for 3 minutes.
    3. Add chilli and lemon juice to the pan with chicken and vegetables. Also add peas to the pan of noodles.
    4. After 1 minute add the noodles and peas to the chicken pan, mixing together and adding the parsley, salt and pepper. Continue to cook for a further minute before serving.

    Tip

    As I like my food with a bit of a kick I like to add the chilli and pepper but it can be easily missed out for those that don't like spice.
