About this recipe: A tangy salsa made by gently cooking marinated nectarines and red onion. Perfect for summer and great as a side to barbecued fish or chicken! Add some fresh coriander leaves for serving.


Serves: 2 

  • 2 nectarines, pitted and chopped
  • 1/4 medium red onion, finely chopped
  • 4 tablespoons balsamic vinegar
  • 1 teaspoon sugar, or to taste
  • 1/2 teaspoon dried coriander
  • 1/4 to 1/2 teaspoon salt to taste
  • freshly ground black pepper to taste

  1. In a bowl, mix the nectarines, onion, vinegar, sugar, coriander, salt and pepper. Allow to sit for 5 minutes.
  2. In a pan over medium heat, cook and stir the nectarine mixture for 10 minutes, or until onion and nectarines are tender and lightly browned.
