Oatmeal chia seed cookies

    An easy way to incorporate chia seeds into family treats. These delicious cookies contain no eggs or butter and are easy to make. Cookies will be soft; allow them to cool completely

    Makes: 12 cookies

    • 160g oats
    • 220g soft brown sugar
    • 80g wholemeal flour
    • 2 tablespoons chia seeds
    • 1 teaspoon ground cinnamon
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 160ml apple sauce or apple puree
    • 3 tablespoons coconut oil
    • 120g dried cranberries
    • 80g chocolate chips (optional)
    • 25g coconut flakes (optional)

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Combine oats, brown sugar, flour, chia seeds, cinnamon, bicarbonate of soda, baking powder and salt in a bowl. Stir apple sauce and coconut oil into oat mixture until evenly mixed. Fold cranberries, chocolate chips and coconut into mixture. Spoon cookie dough onto the prepared baking tray.
    3. Bake in the preheated oven until edges of cookies are lightly browned, 10 to 15 minutes.

    These taste really good although I made some substitutions.... Instead of applesauce I used 1 lg. browning banana and instead of brown sugar I used 0.5 cup honey. Also I used spelt flour instead of regular flour and raisins instead of cranberries.     Yay! These were the best vegan cookies that I've found so far. I did make a couple of minor modifications: 1) subbed milled flax seed for the chia seeds 2) used one half of the sugar 3) added 1/2 tsp. vanilla extract 4) subbed coconut unsweetened yogurt for the coconut oil.     These cookies were really easy to make and they came out really big. I didn't add cranberries because I didn't have any, but I did include the chocolate chips and coconut.
