About this recipe: An easy way to incorporate chia seeds into family treats. These delicious cookies contain no eggs or butter and are easy to make. Cookies will be soft; allow them to cool completely

Makes: 12 cookies

  • 160g oats
  • 220g soft brown sugar
  • 80g wholemeal flour
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 160ml apple sauce or apple puree
  • 3 tablespoons coconut oil
  • 120g dried cranberries
  • 80g chocolate chips (optional)
  • 25g coconut flakes (optional)

  1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
  2. Combine oats, brown sugar, flour, chia seeds, cinnamon, bicarbonate of soda, baking powder and salt in a bowl. Stir apple sauce and coconut oil into oat mixture until evenly mixed. Fold cranberries, chocolate chips and coconut into mixture. Spoon cookie dough onto the prepared baking tray.
  3. Bake in the preheated oven until edges of cookies are lightly browned, 10 to 15 minutes.
