Mike's sweet chilli sauce

    A nice, tasty, sweet and spicy sauce for chicken and beef dishes, or to use as a dipping sauce.

    Serves: 4 

    • 115g granulated sugar
    • 2 bird's-eye chillies, finely chopped
    • 1/4 red pepper, finely chopped
    • 2 garlic cloves, finely chopped
    • 1 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/2 teaspoon red chilli flakes (optional)
    • 3 tablespoons tomato ketchup
    • 50ml rice or cider vinegar
    • 200ml water
    • 1 1/2 tablespoons cornflour, mixed with a little water

    1. Add the sugar, chillies, pepper, garlic, ginger, salt, chilli flakes and tomato ketchup to a saucepan. Stir all the ingredients together then add the vinegar and water and simmer on a medium heat for 10 to 15 minutes, stirring occasionally.
    2. Add the cornflour and water mixture to make the sauce thicker. To get the consistency you desire use a little more cornflour if needed by adding a half a teaspoon at a time.
