Serves: 6 

  • 1 tablespoon olive oil
  • 500g Quorn® mince
  • 1 onion, finely chopped
  • 3 carrots, diced
  • 1 pepper, diced
  • 1 tablespoon dried mixed herbs
  • 200ml boiling water
  • 400g tin chopped tomatoes
  • 1 tablespoon tomato puree
  • 1 handful fresh basil leaves
  • 1 jar lasagne cheese sauce
  • 2 teaspoons ground nutmeg
  • 500g dried lasagne sheets
  • 50g grated Cheddar cheese
  • 3 fresh tomatoes, sliced

  1. Heat the oil in a large saucepan. Add the chopped onions and Quorn® mince. Fry in the pan until the onions are golden brown. This will take about 5 minutes on a medium heat.
  2. Next add the pepper and carrot along with the dried mixed herbs. To prevent the mixture from sticking to the pan add 200ml boiling water.
  3. Continue to mix and add the can of chopped tomatoes along with the tomato puree. Bring the heat to simmer and cook for a further 15 minutes. Right at the end of the cooking process, add the fresh basil leaves.
  4. Preheat the oven to 180 C / Gas 4.
  5. In a separate saucepan, gently heat through the lasagne cheese sauce and add the nutmeg. Heat for approximately 5 minutes.
  6. In a large glass baking dish start to assemble the lasagne. Firstly add a third of the mince mixture. Next cover the layers with the dried lasagne sheets. On top of this layer add the heated cheese lasagne sauce. Repeat this process until you have used all your sauce mixtures up.
  7. On the very top add 50g of grated cheese and assemble the sliced tomato on top.
  8. Bake in the oven for 40 minutes or until top is golden brown.
