Pancetta, pineapple and curry risotto

    An unusual but delicious twist on a typical Italian risotto! This version is made with smoked pancetta cubes, sweet pineapple and flavoured with curry powder.

    • 150g smoked pancetta cubes or bacon lardons
    • 1.2L vegetable stock
    • 1 shallot, finely chopped
    • knob of butter
    • 2 tablespoons extra virgin olive oil
    • 350g Arborio, Carnaroli or Vialone Nano risotto rice
    • 100ml white wine
    • 1 tin (400g) chopped pineapple, drained
    • 2 tablespoons yellow curry powder
    • 4 tablespoons grated Parmesan cheese, plus more for serving

    1. Cook the pancetta in a hot pan without any fat until brown but not too crisp. Drain the fat and keep warm.
    2. Warm up the stock and keep it hot in a pan on low heat.
    3. In a risotto pan over medium-low heat, heat butter and oil. Add shallot and cook until tender but not browned. Add the rice, stir and cook for 4 to 5 minutes or until toasted (it will absorb the fat and release a nutty aroma). Pour in the wine and let the alcohol evaporate. Then add the warm stock, a ladle at the time, stirring after each addition and only adding the next one when the first has been absorbed. Proceed the same way until the rice is cooked, about 18 minutes from the first ladle of stock.
    4. Five minutes before the end, add pancetta and chopped pineapple to the risotto. After 3 minutes, add the curry powder. Stir and finish cooking.
    5. When the rice is cooked, remove from the heat and add the grated Parmesan cheese. Stir and let stand 3 to 5 minutes. Serve with more grated cheese if you like.

    Be aware this recipe calls for 2 table spoons of curry powder I only used 1 and although family liked it if you are serving to small children add a little at a time and taste  -  23 Feb 2017  (Review from Allrecipes AU | NZ)
