Mix the sweet chilli sauce, sesame oil and light soy sauce together with the pepper, chilli flakes, ginger, cinnamon and salt in a large bowl. Add the chicken, bacon, potato, broccoli, cauliflower and garlic. Mix well. If liked, allow to marinate for 20 minutes to 1 hour in the fridge.
Add onion to a frying pan with the butter and a small drizzle of oil to stop it burning. Fry the onions until translucent.
Put the chips in the oven as directed on the packet.
Whilst the chips are in the oven, add the chicken mixture to the frying pan with the onions and fry for 20 minutes. Then add the water and simmer until the water has reduced to make a sauce. Add the cornflour to thicken the sauce. (Keep an eye on the chips.)
Plate up your meal and garnish with celery leaves.
