Dad's slop (Chicken, veg and chips Chinese style)

    A quick and easy meal that is delicately sweet, chunky and spicy-ish with chicken, bacon, onion, cauliflower, broccoli, potato and oven chips.

    Serves: 4 

    • 4 tablespoons sweet chilli sauce
    • 2 tablespoons toasted sesame oil
    • 2 tablespoons light soy sauce
    • 1 tablespoon ground black pepper, or to taste
    • 1 teaspoon red chilli flakes
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1 teaspoon salt, or to taste
    • 3 chicken breast fillets, cut into chunks
    • 4 slices bacon, chopped
    • 2 small potatoes, thinly sliced
    • 3 broccoli florets
    • 3 cauliflower florets
    • 4 cloves garlic, chopped
    • 2 medium onions, cut into small pieces
    • 1 tablespoon butter
    • oil for frying
    • 1 packet oven chips
    • 75ml water
    • 2 teaspoons cornflour
    • celery leaves, to garnish

    1. Mix the sweet chilli sauce, sesame oil and light soy sauce together with the pepper, chilli flakes, ginger, cinnamon and salt in a large bowl. Add the chicken, bacon, potato, broccoli, cauliflower and garlic. Mix well. If liked, allow to marinate for 20 minutes to 1 hour in the fridge.
    2. Add onion to a frying pan with the butter and a small drizzle of oil to stop it burning. Fry the onions until translucent.
    3. Put the chips in the oven as directed on the packet.
    4. Whilst the chips are in the oven, add the chicken mixture to the frying pan with the onions and fry for 20 minutes. Then add the water and simmer until the water has reduced to make a sauce. Add the cornflour to thicken the sauce. (Keep an eye on the chips.)
    5. Plate up your meal and garnish with celery leaves.
