Easy vegan snack bars

    I've tried these types of bars in my local health food store and after a few attempts I think I have got the texture spot on. These bars make a great treat for any vegan or non vegan and are super easy to make. Please make sure your peanut butter is vegan before starting.

    Serves: 8 

    • 125g pitted dates
    • 50g oats
    • 2 tablespoons peanut butter

    Prep:10min  ›  Extra time:2hr chilling  ›  Ready in:2hr10min 

    1. Pop all the ingredients into a blender or food processor.
    2. Blitz all ingredients until the dates are chopped up well. About 2 minutes is about right.
    3. Spoon out ingerdients then with the back of the spoon press firmly into a baking tray or into Tupperware tubs as I have. Refrigerate for 2 hours.
    4. Cut into desired size and serve, or wrap individual bars in tin foil and keep in the fridge for up 5 days.


    Great for picnics, parties or even in your packed lunch.
