Spiced red cabbage


    Red cabbage stewed with apple and spices. A lovely side dish to sausages or roast meat.

    Serves: 4 

    • 1 tablespoon sunflower oil
    • 225g (8 oz) cooking apples - peeled, cored and diced
    • 1 onion, chopped
    • 450g (1 lb) red cabbage, shredded
    • 150ml (1/4 pt) vegetable stock
    • 2.5cm (1 in) piece root ginger, peeled and grated
    • 1 pinch ground cinnamon or allspice
    • 1 splash cider vinegar
    • salt and pepper

    1. Heat oil and gently cook cabbage, apple and onion for 5 minutes.
    2. Add cabbage, stock, ginger, spices, vinegar, salt and pepper; bring to the boil. Simmer 15 to 20 minutes until veg is tender and most of liquid evaporated. Add more stock during cooking if necessary.
    3. Season to taste and serve.
