250g caster sugar

310g self raising flour
60g ground almonds

Preheat the oven to 150 C / Gas 2.
Grease a 24cm round cake tin. Line the bottom with parchment.
Cream together the butter and sugar till smooth and fluffy. Add eggs one at a time, beating well after each addition. Mix in either the lemon zest or the vanilla.
Sift in the flour, then stir in together with the ground almonds. Mix till just combined, taking care not to overmix. Cake mixture will be thick. Transfer the cake mixture to the prepared tin and smooth the top with a spatula.
Bake the cake in the oven for 60 minutes. Check cake after 30 minutes; if it is browning too quickly, loosely cover with a sheet of foil. Cake is done when a skewer inserted in the centre comes out clean.
