Portuguese seafood stew

    My version of arroz de Marisco! Serve with bread if you like!

    Serves: 4 

    • olive oil
    • 2 red onions, chopped
    • 1 red pepper, chopped
    • 1 orange pepper, chopped
    • 2 leeks, chopped
    • 4 garlic cloves, chopped or crushed
    • 1 teaspoon paprika
    • 1 teaspoon mixed herbs
    • 1 (400g) tin chopped tomatoes
    • 500ml fish stock
    • 4 tablespoons white wine
    • 1 piece cod, cubed
    • 400g cooked brown rice
    • 500g mixed seafood (prawns, squid, mussels)
    • salt and pepper

    1. Heat a generous drizzle of olive oil in a large casserole over medium heat. Add the onion, peppers, leeks and garlic. Cook and stir till softened, then add the paprika and herbs.
    2. Pour in the tinned tomatoes, stock and wine. Bring to a simmer and add the cod. Cook at a gentle simmer for 5 minutes.
    3. Add the cooked rice, then the seafood. Bring to the boil, then reduce and simmer, covered, for 10 minutes, or until seafood is cooked through. Season to taste with salt and pepper, then serve.
