Cool cucumber, salmon and prawn terrine

    This is an easy yet impressive way to present a salmon and prawn mousse. The three-ingredient mousse is encased in cucumber slices, then chilled. Serve with crackers or baguette and a crisp green salad.

    Serves: 4 

    • 2 whole cucumbers
    • 100g cooked salmon, bones removed
    • 50g cooked prawns
    • 100g cream cheese

    1. Slice the cucumber into thin circles.
    2. Blend the cooked salmon, cream cheese and prawns into a thick moose.
    3. Line a small dish or tin with cling film, then with the cucumber slices on the bottom and around the sides. Then spread the moose on top of the cucumber. Cover the top with the remaining cucumber slices.
    4. Place in the fridge to chill, up to a few hours (this is best served the same day).
    5. Remove from tin, peel off clingfilm, and serve chilled.
