Mini sponge cupcakes


    Fluffy and delicious mini sponges. Really simple. You'll probably read the ingredients and not believe me, but these make the best cakes ever.

    Makes: 8 to 12 cupcakes

    • 100g self raising flour, sifted
    • 100g butter, softened
    • 100g caster sugar
    • 2 eggs

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Whisk all ingredients together until smooth but don't overdo it.
    2. Spoon cake mixture into a cupcake tin.
    3. Bake at 180 C / Gas mark 4 for around 20 minutes.


    Cakes are done when a skewer inserted in the centre comes out clean.
