Pineapple pork

    This meal was something that me and my kids and partner made using bits we normally end up leaving in the cupboard.

    Serves: 4 

    • 1 teaspoon olive oil
    • 500g diced pork
    • 3/4 pint rice
    • 1 large tin pineapple in syrup

    1. Preheat the oil in the wok or large frying pan. When hot, add pork and cook till no longer pink in the centre.
    2. Meanwhile, cook your rice according to packet instructions.
    3. When the pork is cooked add the whole tin of pineapple chunks including the syrup and stir well.
    4. When the rice is cooked put the pork in with the fluffy rice and mix.
    5. Serve and enjoy.
