Quick and easy leek and potato soup

    Serves: 4 

    • 2 large leeks, chopped
    • 4 medium potatoes, peeled and chopped
    • 850ml stock (made from a stock cube)
    • black pepper

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Place the vegetables in a saucepan and add the stock. Heat until the stock is boiling.
    2. Turn down the heat and cook gently for 30 minutes, and then add some black pepper.
    3. Serve the soup hot.

    Top tips:

    1. Try different kinds of vegetables- carrots, swede, cabbage or peppers could all be added.
    2. You could also try adding chopped cooked chicken (if you're not vegetarian) or a little grated cheese for the last 5 minutes of cooking.
