A delightfully different way to enjoy strawberries. Perfect for a garden party or BBQ, served as a refreshingly sweet starter or light and healthy dessert.
2 punnets strawberries, hulled
100g natural yoghurt
60ml freshly squeezed orange juice
1/2 lemon, juiced
2 tablespoons simple syrup, or to taste
1/2 teaspoon vanilla extract

- Combine strawberries, yoghurt, orange juice, lemon juice, simple syrup and vanilla in a blender; blend until smooth. Refrigerate soup until chilled, about 30 minutes.
Use a flavoured simple syrup such as mint, thyme, lavender, or orange to add some interesting complexity.
Make this soup vegan by replacing the yoghurt with coconut milk or cream.
