Amazing berry ice cream

    This berry ice cream is so simple and really refreshing for a hot summers day. This recipe makes 50g but is easily halved or doubled. If you don't have one of the ingredients it is easy to just swap it for something else! The berries don't have to be frozen they could be fresh!

    Serves: 2 

    • 1 cup frozen red berries (120g)
    • 1 cup frozen raspberries (120g)
    • 4 tablespoons cherry syrup (optional)
    • 2 tablespoons blueberries
    • 2 tablespoons fromage frais
    • 1 tablespoons natural yoghurt
    • 5 teaspoons sweetener
    • 1/2 teaspoon vanilla extract

    1. Combine the frozen red berries, frozen raspberries and the cherry syrup and mash.
    2. Add the blueberries, fromage frais and natural yoghurt, and mix.
    3. Then add the sweetener and vanilla, and mash, or blend in a blender for a smoother texture.
    4. Put the mixture into an old ice cream tub or a container with a lid and place in the freezer.
    5. Stir every 30 minutes stir to reduce ice crystals, until impossible to stir.
