Ingredients
Makes: 12 cupcakes
- 170g butter
- 170g caster sugar
- 3 eggs
- 170g plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract

- Cream the butter and the sugar together.
- Crack the eggs into a mug or a small bowl. Whisk with a whisk or a fork. Add to the butter-sugar mixture.
- Stir in the flour and baking powder, then the vanilla. Divide between 12 cupcake cases.
- Bake in the centre of a preheated oven (170 C / Gas 3) for 20 to 25 minutes, or until a skewer comes out clean.
