About this recipe: Coleslaw made with cucumber instead of cabbage. A vinegar dressing makes it much lighter compared to using mayo. A quick and easy summer side salad. Tastes great right when you make it, but letting it sit for at least an hour will blend the flavours more.


Serves: 6 

  • 2 cucumbers - quartered, seeded and thinly sliced
  • 2 carrots, grated
  • 1/4 sweet onion, grated
  • 2 tablespoons caster sugar
  • 1 1/2 teaspoons ground coriander
  • 1 teaspoon sea salt, or to taste
  • 1/2 teaspoon coarsely ground black pepper
  • 4 tablespoons apple cider vinegar

  1. Combine cucumbers, carrots, onion, sugar, coriander, salt and black pepper together in a bowl; add vinegar and mix well.
