Cucumber coleslaw

    10 min

Coleslaw made with cucumber instead of cabbage. A vinegar dressing makes it much lighter compared to using mayo. A quick and easy summer side salad. Tastes great right when you make it, but letting it sit for at least an hour will blend the flavours more.

Great and easy to make, and good for you. What more could you ask for! I don't like my salads sweet so I only added a scant teaspoon of sugar. I can't seem to grate onions so I chopped real small. Thanks for the recipe.  -  24 Jun 2016  (Review from Allrecipes US | Canada)
