2 cucumbers - quartered, seeded and thinly sliced
2 carrots, grated
1/4 sweet onion, grated
2 tablespoons caster sugar
1 1/2 teaspoons ground coriander
1 teaspoon sea salt, or to taste
1/2 teaspoon coarsely ground black pepper
4 tablespoons apple cider vinegar
