Grapefruit, ginger and cinnamon jam

    A sweet jam that's packed with flavour and would grace any slice of toast or cheese and biscuit platter. Nice on ice cream too.

    Makes: 1 jar

    • 580g canned grapefruit
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 100g granulated sugar

    1. Sieve the grapefruit from the tin, retaining 100ml juice. Chop the grapefruit segments as small as you can, then add to a nonstick pan with 100ml of juice, the sugar, cinnamon and ginger. Bring to the boil and simmer until the juice has reduced to nearly nothing. Spoon into a clean jam jar and leave to cool with the lid off.
