About this recipe:Flavoured water is so much more refreshing and thirst-quenching than some soft drinks you can buy. This flavoured water is infused with cucumber, ginger, lemon balm, citrus and nectarine. The jug can be refilled with water 1 to 2 more times before it loses flavour. Keeps for up to 3 days in the fridge.
1/2 small cucumber, sliced thin
1/2 nectarine, pitted and chopped
1/2 lemon, sliced
1/2 lemon, juiced
1/2 lime, sliced
1/2 lime, juiced
4 slices fresh ginger, peeled, or more to taste
10 lemon balm leaves, or more to taste
natural sweetener to taste (optional)

Place cucumber, nectarine, lemon slices, lemon juice, lime slices, lime juice, ginger and lemon balm leaves in a large jug or pitcher; mash gently with a wooden spoon. Pour in water; stir and refrigerate until flavours blend, 2 hours to overnight. Strain; serve over ice.
Lemon balm can be substituted with fresh mint leaves; lime substituted with slices and juice of a red grapefruit; and nectarine substituted with peach, if desired. If you like your water fizzy, add some sparkling mineral water as well.
