Quorn sausage and courgette rigatoni bake

    A hearty vegetarian pasta bake that can be made with other vegetables such as peppers or aubergine. Equally the Quorn sausages can be switched to meat varieties for the carnivores.

    • 450g rigatoni or tube pasta
    • 1 large courgette diced
    • 1 large onion diced
    • 4 Quorn sausages sliced
    • 1 clove garlic, diced
    • 400g tin chopped tomatoes
    • 1 teaspoon paprika
    • 1/2 teaspoon chilli flakes
    • 1 ball mozzarella, thinly sliced or diced


    1. Add pasta to boiling water and cook until al dente.
    2. Sauté onion and courgette for about 3 minutes.
    3. Add sausages and garlic and continue to cook for another couple of minutes.
    4. Add tomatoes, paprika and chilli flakes; bring to a simmer before adding in the cooked, drained pasta.
    5. Transfer into an oven proof dish, top with mozzerella and place under the grill until the cheese starts to lightly brown.
