Quorn sausage and courgette rigatoni bake.

    Healthy but hearty vegetarian meal that can be made for just one or the whole family on a budget.

    • 4 Quorn sausages sliced
    • 1 large courgette diced
    • 1 large onion diced
    • 400g tin chopped tomatoes
    • 1 clove garlic diced
    • 1tsp paprika
    • 1/2tsp chilli flakes
    • 1 ball mozzarella diced


    1. Add pasta to boiling water and cook until al dente.
    2. Sauté onion and courgette for about 3 minutes.
    3. Add sausages and garlic and continue to cook for another couple of minutes.
    4. Add tomatoes and seasoning and bring to a simmer before adding in the drained pasta.
    5. Transfer into an oven proof dish, top with mozzerella and place under a medium grill until the cheese starts to lightly brown.


    Further vegetables such as peppers or aubergine can be added to make the dish even tastier and healthier. Equally the Quorn sausages can be switched to meat varieties for the carnivores.
