Fluffy fairy cakes

    Light and delicate fairy cakes with a hint of orange. You could add orange zest for a more intense orange flavour.

    Makes: 20 fairy cakes

    • 110g (4 oz) caster sugar
    • 110g (4 oz) Flora®
    • 110g (4 oz) self raising flour
    • 2 eggs
    • 2 tablespoons orange juice

    1. Preheat the oven to 180 C / 160 C Fan / Gas 4. Line cupcake tin with 20 cases.
    2. Beat together the sugar and Flora® till light and fluffy. Sift in the flour and stir well.
    3. Crack the eggs into a separate cup and whisk in the orange juice.
    4. Add the liquid to the sugar mixture; beat thoroughly to rid the mixture of lumps. Fill cupcake cases 3/4 full with the mixture.
    5. Bake for 20 minutes if using a fan oven; slightly longer if you aren't using a fan. Once a skewer inserted in the centre of a cake comes out clean, your cakes are done.
    6. Remove cakes from oven and let cool. Once cool, ice or decorate as desired.

    To make chocolate version...

    Instead of 110g (4 oz) self raising flour, use 85g (3 oz) self raising flour and 30g (1 oz) cocoa powder, and use milk instead of orange juice. Follow the rest of the recipe as stated.
