Cucumber tomato salad with feta and honey

    This simple and delicious salad is made with slices of cucumber and tomato, topped with spring onions, feta cheese, fresh basil, rice wine vinegar and honey. There is no need to mix up the dressing as all the flavours combine beautifully without any additional effort. You could simply use all tomatoes, or all cucumbers if you prefer! Serve immediately or cover and refrigerate up to four hours before serving.

    • 3 cucumbers, peeled and sliced
    • 2 large ripe tomatoes, sliced
    • 2 spring onions, sliced thin
    • 8 leaves fresh basil, chopped
    • 75g feta cheese, crumbled
    • 120ml rice wine vinegar
    • 120ml honey

    1. Layer cucumbers, tomatoes, spring onions and basil in a wide bowl; top with feta cheese. Drizzle rice wine vinegar over the surface; top with honey.

    7.20.16 Thoroughly enjoyed this for lunch today. I followed the instructions but really didn’t measure anything. However, I know that I cut back on honey, since we’re not into things too sweet these days. The mild seasoned rice vinegar was a good choice because it didn’t overpower the other ingredients.
