    About this recipe: This twist on traditional lemon curd uses limes instead to make a sweet filling for cakes. You can also use it to sandwich meringues together or as a layer in a trifle. Or you can just put it on your toast if you prefer!

    Serves: 8 

    • 200g caster sugar
    • 60g butter
    • 180ml fresh lime juice
    • 1 tablespoon lime zest
    • 2 eggs, beaten

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Place the sugar, butter, lime juice and lime zest in the top of a double boiler; stir over medium-high heat until butter melts. Mix 2 tablespoons hot lime mixture into the eggs and stir to blend.
    2. Reduce heat to medium until water simmers. Slowly whisk egg mixture into the lime mixture. Cook over the double boiler until lime mixture thickens and coats the back of a wooden spoon, 20 to 25 minutes. Cool slightly and spoon into a clean, glass jar. Cover and refrigerate.

    This curd was absolutely delicious! To make it as a filling for Key Lime Cake, I substituted 1.5 Tbsp of lime juice for lemon juice and to make sure it would hold up as a thick filling, I sprinkled in one tsp. of flour while heating.
