Cara's perfection brownies

    I spent hours going through hundreds of different websites and cookery books trying to find the perfect recipe for this decadent treat. Regretfully my attempts proved unsuccessful so I - a humble home cook - decided to do something about it. Now after many, many, many tried and tested results this recipe has been born with just the right amount of everything to give true perfection. My one tip is to be generous with the cocoa powder and to be free to add your own twist. Marshmallows are always a great crowd pleaser! Enjoy!

    Serves: 8 

    • 400g caster sugar
    • 225g butter, melted
    • 70g cocoa powder
    • 1 teaspoon vanilla extract
    • 4 medium eggs
    • 2 medium packets chocolate chips
    • 225g plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt

    1. Preheat the oven to 180 C / Gas 4. Grease or line a rectangular 20x30cm tray.
    2. Cream the butter and sugar together until well combined.
    3. Sift in the cocoa powder then add the vanilla.
    4. Crack in the eggs one at a time, mixing well in between.
    5. Sift in the flour and then add 1 1/2 packets of the chocolate chips.
    6. Sift in the baking powder and then add the salt. Stir well.
    7. Spread onto the tray and sprinkle over the remaining chocolate chips.
    8. Bake for 20 to 25 minutes or until brownie has a hard top and is firm but not too hard.
    9. Wait to cool then cut into equal square portions.


    To finish sift over a little bit of icing sugar. These brownies keep up to 2 weeks in an airtight container and are delicious when heated up and served with ice cream!
