I enjoy playing around with different flavours for caipirinhas - one of my favourite drinks! This one was surprisingly delicious. You can measure the vanilla bean to match your preference by cutting it in smaller pieces.
Cut the peach in medium sized pieces. If you want, save a wedge for decoration.
Put the peach pieces in a 250ml glass and add the sugar. Muddle it with a muddler, then fill the glass with ice and top it with the cachaça. If you enjoy a strong vanilla flavour, go ahead and scrape the seeds from the bean and add to the drink, then stir it well, making a circular motion from bottom to top. If you prefer less vanilla, then you can either use a scraped out vanilla bean (it still imparts flavour) or add it whole and not scrape it at all. Leave the vanilla bean in the glass as decoration.
