Peach and vanilla caipirinha


    I enjoy playing around with different flavours for caipirinhas - one of my favourite drinks! This one was surprisingly delicious. You can measure the vanilla bean to match your preference by cutting it in smaller pieces.

    Makes: 1 cocktail

    • 1 ripe peach, stone removed
    • 1/2 tablespoon caster sugar
    • 50ml cachaça
    • 1 vanilla bean
    • ice cubes

    1. Cut the peach in medium sized pieces. If you want, save a wedge for decoration.
    2. Put the peach pieces in a 250ml glass and add the sugar. Muddle it with a muddler, then fill the glass with ice and top it with the cachaça. If you enjoy a strong vanilla flavour, go ahead and scrape the seeds from the bean and add to the drink, then stir it well, making a circular motion from bottom to top. If you prefer less vanilla, then you can either use a scraped out vanilla bean (it still imparts flavour) or add it whole and not scrape it at all. Leave the vanilla bean in the glass as decoration.
