Tiramisu strawberry trifle

    Strawberries are layered with a sweet creamy filling and coffee-soaked ladyfingers for a colourful tiramisu-inspired trifle. Don't be put off by the cottage cheese - you won't even taste it!

    Serves: 4 

    • 1 tablespoon instant coffee granules
    • 4 tablespoons hot water
    • 225g cottage cheese
    • 180ml whipping cream
    • 60g icing sugar
    • 140g savoiardi sponge fingers
    • 225g fresh strawberries, hulled and sliced
    • 4 whole fresh strawberries for decoration

    1. Stir instant coffee granules and water together in a bowl until dissolved. Let cool.
    2. Beat cottage cheese, cream and icing sugar together in a separate bowl with an electric mixer on medium-high speed until thickened, 1 to 2 minutes.
    3. Brush each sponge finger with coffee. Arrange a few sponge fingers in the bottom of 4 serving glasses. Spread a layer of cream filling on top of the sponge fingers. Layer a few strawberry slices on top of cream filling. Repeat with remaining sponge fingers, cream filling and sliced strawberries, ending with a layer of cream filling. Garnish each glass with a whole strawberry.

    I make this regularly for parties and such and without fail, I always get folks begging me for this recipe. A few modifications: 1) I take a giant bar of Toblerone milk chocolate and grate that. I use that instead of the chocolate called for in the recipe. 2) Pudding mix, make the instant vanilla pudding per box instructions, blend in the cream cheese, then add in the cream or heavy milk as needed. Start with one ingredient and play with it until the consistency and tase is just right 3) Lady fingers: If you can't find lady fingers, another great substitute is pound cake cut very thinly and into smaller pieces. Sara Lee pound cake is great for this. 4) Cut up the strawberries or slice them. 5) Layer the cake, strawberries, pudding mix, grated Toblerone.     I made this recipe x4-had a little trouble getting the cottage cheese mixture smooth with electric mixer. I substituted angel food cake broken up vs. ladyfingers since I could not find them at store. It turned out very well, however.
